Nature & Foraging!

Foraging is something I have always loved to know more about, we’ve all picked raspberries but how many of us have collected walnuts!
One of my perfect moments in Hungary came as we were weeding in the hot sunshine. From no where butterflies appeared and landed on us. Sadly it was the romantic scenario it seemed after I discovered why, but it’s still beautiful to watch.

Koppány Pines already has a small orchard with pears, plums, cherries, sloes and walnuts. Our expansion plan:
Year 1: Prepare the ground and garden layout plan.
Year 2: Build raised bed, edible garden. I’ve been working on companion and square metre planting. Herbs will be grown in pots. Mark out the herb garden in the meadow and hedgerow borders, ready for planting in year 2.
Year 3: Plant up the herb garden creating a central fire & feast areas and separate picnic areas.

Preserving our harvest!
Our crops are plentiful in the summer, however, we need to find ways to ensure we have food for the winter months. This will include trialling dehydration, fermenting, freezing and canning which are all age-old preservation methods.
